Chicken Sofriito

I tapped into my husband's Colombian roots for the Sofriito as a healthy topping on this chicken dish. Then I threw in A few of my own touches

Illini Chicken Sofriito
  • pounds chicken tenders
  • 1 cup Roma tomatoes, diced
  • 1 cup white onions, diced
  • 1 tablespoon garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt

Heat oil in a large skillet.

add all ingredients, stirring to combine.

cook chicken tenders five minutes on each side on medium-high heat.

Cover, reduce heat and simmer ten more minutes

step 5

Serve over rice.
