  • 1 Waffle, defrosted
  • 1 Egg
  • Salt & Pepper
  • cooked crumbled bacon
  • crumbled queso fresco or grated mozarella
  • thinly sliced scallions
  • Finely diced red pepper

Make a well in the center of the waffle with a spoon. Crack egg into well & sprinkle with salt & pepper Top with red pepper, scallions and cheese. Bake at 400 for 15-20 minutes or until egg white is set. Top with crumbled bacon.
