Sauteed Buttered Cubed Potatoes

These are my favorite food of all time. I used to go to Chinese buffets when I was little and I used to only get the cubed potatoes or the french fries. I looked on the internet when I was 8 to find the recipe to make them at home, but of course I was too little to actually make them, and others were saying they burned easily. Now I make them all the time, and do they get burnt? Maybe the first few times I made them,because I forgot the step below that says "SECRET". I had tried that step on my 5th try and they turned out exactly the same as the buffet had it!

  • 5 pound of russlet potatoes
  • 2 cups vegetable oil
  • cold water, tapped
  • 2 dashes fresh cracked black pepper
  • 1/2 stick of butter or margarine, melted

Step 1 - Cutting the Potatoes

Skin the potatoes so there is no skin on them. Cut the potatoes into cubes about 1 to 1 1/2 thick. Make sure that the potatoes are cleaned with cold water before you continue.

Step 2 - SECRET

Put the potatoes into a microwavable bowl and soften them by microwaving it for 3 to 5 minutes depending on your microwave. This is the secret because they are soften up when you fry them, and they don't burn because you don't have to fry them as long. The reason why they get burnt is because the inside of the potato takes longer to cook than the outside, so when you heat them up, it makes the inside soft.

Step 3 - Frying

Add the oil to the pan. Put the soften potatoes in a pan after the oil is hot. Fry until the potatoes look like a little crispy on the edges, but not too crispy. Then turn down to low heat and fry for 1 more minute. After that, turn off the stove, pour out the oil and let the potatoes sit for 5 minutes. Add potatoes to bowl, and add the pepper to them. If you want, add salt.

Step 4 - Preparing and Enjoying

In a mini cup, add the melted butter for people to drizzle over the potatoes. Butter is included in the total calories, so if you don't add butter it is not the much calories per serving. Enjoy.
