Stuffed Leg Of Lamb

This recipe was shown to me by my husbands grandfather. He spoke very little english and took me through it step by step when I first got married. This is a family tradition that we have every Easter and I think I am the only one who knows how to make it. I haven't changed it in 34 years,

  • 1 whole leg of lamb bone in, trim outside visible fat
  • 1 wedge sharp provolone cheese, cut into small pieces
  • 1 wedge parm chese, cut into small pieces
  • 1 heads of garlic, cleaned and separated into cloves
  • 1 bunch italian parsley, leaves picked off
  • 3 pounds fingerling potatoes, washed and halved
  • 1 pound small onions, peeled

with a paring knife make holes or pockets all over the leg of lamb. Make them deep and make many,

insert a piece of each cheese, a clove of garlic, and the parsley leaves into each hole. Bake in oven for about 5 hours, add potatoes and onions into the same pan and finish, Meat should be slightly browned and the potatoes done,. Since the size of the lamb vaires check internal meat temp for doneness. Let meat sit then slice and serve.
