Think of visiting your favorite steakhouse and making a burger out of it! This burger has the best cuts of beef, bacon, sweat potatoes fried in duck fat, dark porter caramelized onions, melted smoked Gouda and aged white cheddar, and an arugula salad with a homemade Caesar aioli dressing to top it off. A garlic brioche bun frames it all up.

  • 3 ounces beef tenderloin, cut into 1 inch pieces
  • 3 ounces ribeye, cut into 1 inch pieces
  • 2 ounces bacon, cut into 1 inch pieces
  • 1 tablespoon steak sauce
  • 1 clove garlic, minced
  • 1/2 medium sweet onion (vidalia or other sweet variety), cut into round slices
  • 3 tablespoons porter beer
  • 1 sweet potato, cut into round slices
  • 1/2 cup duck fat
  • 1 tablespoon hot pepper jelly
  • 2 ounces aged white cheddar, sliced
  • 2 ounces smoked Gouda, sliced
  • 1 garlic brioche bun, buttered and toasted
  • 1/3 cup arugula, washed and torn
  • 1/8 cup tomato, chopped
  • 4 ounces strips of bacon, cooked
  • 1 tablespoon Caeser dressing

Beef Patty

Cut steak, bacon, and butter into small pieces. Season with 1 tablespoon steak sauce, garlic, salt and pepper. Grind it together. Form patties with large round mold

Caeser Aoili (or you can use store-bought Caeser Dressing)

5 egg yolks from extra large eggs, 2 cups vegetable oil, Juice of a lemon, Zest of a lemon, 2 teaspoon hot chili sauce (such as Sriracha), teaspoon freshly ground pepper, teaspoon seasoned salt, 2 tablespoons Dijon mustard, 1 tablespoon chopped capers, 2 garlic cloves minced, anchovy paste (to taste). * Using whip on mixer, whip eggs on highest speed until they look like creamed butter. * Very slowly add 1 cup of vegetable oil * Alternate adding lemon juice with remaining cup of vegetable oil * With mixer still going, add remaining ingredients

Porter Beer Caramelized Onions

Heat butter in saute pan over medium high heat. Add onions and cook until translucent. Reduce heat to medium low. Add porter beer. Stir well and continue cooking for approximately 20 minutes or until onions are light brown, stirring constantly.

Sweet potato patty

Cook sweet potato patties in duck fat until soft. Glaze with pepper jelly

Grill

Grill burger patties 5 minutes per side over medium high charcoal grill. Place buttered buns on grill and grill until golden brown. Top burger patties with cheese slices and let melt (about 1 minute).

Build it

Bun, Caramelized onions, Sweet potato patty, Beef Patty with cheese, Arugula and tomatoes tossed in dressing, Top with bacon and bun
